How do people know how to engrave realistic looking pictures in Webster's Dictionary?

I have seen pictures with word descriptions almost like stories in Websters and other Dictionaries, because unlike a lot of people these days for those who don't look at Dictionaries, and for those who don't read them that ofter, the stencil drawings look so realistic, it's crazy! Question is: How did Webster's and Oxford dictionaries make the engravings look like real life?How do people know how to engrave realistic looking pictures in Webster's Dictionary?
Before TV people used to know how to draw very well. Every nobleman and educated person was able to make excellent sketches.How do people know how to engrave realistic looking pictures in Webster's Dictionary?
